OK Guys. I thought I'd share this sucker. Spiced butter. Keeps for about 2 weeks if kept refrigerated. It's a "Heston Recipe Interpretation".
2 tbsp olive oil
1½ tsp ground cumin
1½ tsp cayenne pepper
1½ tsp smoked paprika
1 tsp tomato ketchup
½ tsp Worcestershire sauce
½ tsp Vegemite
125 g unsalted butter, at room temperature
Heat the olive oil in a frying pan and lightly fry the cumin and cayenne pepper for a couple of seconds. Pour into a bowl and add the smoked paprika, tomato ketchup, Worcestershire sauce, Vegemite and butter. Mix together thoroughly, cover and keep in the fridge until required (for up to a week), or freeze for a month.
How to use. Instead of oil when cooking steaks, instead put a dollop of this on bbq plate/frypan and cook normally. DONE!
It adds an amazing flavour to any meat. Sausages, steaks, chops etc.
