Sausage Rolls

These sausage rolls can be eaten hot or cold. Great for the kids lunchboxes too.

Ingredients:
1kg Sausage mince(I use the prepacked woolies/safeway mince... tastes nicer)

4 slices bread crusts off
tsp mixed herbs
1 Onion finely grated

Salt and Pepper to taste
6 puff pastry sheets
1 egg beaten

Lay the sheets of pastry on the bench and cut in half but leave the sheets together.

Soak the bread in hot water for about 5 minutes. Drain off the excess water.

Put the mince, bread, mixed herbs, salt, pepper and onion into a bowl and mix together.

Using a teaspoon spread the mince along the edge of the pastry sheet, and again next to where you've cut the sheet,
repeat until all mixture is used(i usually get 5 1/2 sheets done)

Roll the pastry and mince up into rolls

Pinch the ends of the pastry so the mince does not push out when cutting, and cut to the size you want.

Place the sausage rolls on a greased oven tray and baste with beaten egg.
Bake in a hot oven(200c/400f) for 10 mins, then moderate oven(180c/360f) for 15 mins.

Enjoy  :D

Great stuff Pixie.

My favourite part is licking my hand after mashing it all together!
