Hi all, forgot about this place for a little bit, b4 BC and LD gave there normal subtle reminders...

 
So, whats been happening?

Me, i've moved house... and in that process, i found that a housemate had left a beer brewing keg thingo!
*win!*

I had indulged a little in the thinking of making homebrew... and recent drinking of, and hearing of the production is making me thirsty...

Thus, remembering the most manlyest website on the interwebs, I decided to ask you fellow's about the process, any little hints/tips for a good brew, any hints on personalising a brew and just general beer info...

So my weekends can be
:-* :-* :-* :-X :-X :-X
and not
 :( ::) :-/ :-/ :-/

Actually you might want to ask the brewmeisters about how long it keeps, although I tend to wonder if they would know, never lasts long enough... :)

I haven't brewed beer for more than 5 years, but when I was brewing I never got it to last longer than a month. I've heard of homebrew keeping for a year or more when stored properly, but I woudn't do it myself.

OK..

Typically the issue with homebrew is that the yeast is still alive.  Oxygen invariable seeps back into the bottle (A bottle isn't truly airtight) and thus the yeast reaction starts again.  This process turns the beer into 'malt vinegar'.

Unfortunately, for it to be a true malt vinegar, there should be no hops added.  I can guarantee that the beer you have has had hops added.  As such, when vinegarized, will taste horrible.

FORTUNATELY, it's easy to tell if the beer has vinegarized.  Open it and sniff it.  If it smells like vinegar, it's bad.  If it doesn't, then most likely it's good.

As a little tip, Stout keeps longer than lagers.

Was I arguing?

I actually prefer Ales.

2 reasons.
1)  More robust flavour without being overpowering.
2)  Shitloads easier to brew.
