HOW TO MAKE YOUR OWN CHILLI MANGO SAUCE


I've been growing my own chillies lately and having a surplus of the hot little bastards every week, I started trying to work out what to do with all the extra ones.

Chilli sauce, of course !

This mango one is a cracker; easy to make and tastes awesome (makes about 2 cups of the stuff).

First things first... get a cold beer in your hand, clear off the kitchen bench and throw on an old T-shirt.





What You'll Need

5 fresh green chillies, the hotter the better.
1 large mango
1/4 teaspoon crushed garlic
2 table spoons soy sauce
1 teaspoon sugar
1 teaspoon cilantro leaves (chinese parsely), chopped.




Go find some fresh green chillies.


Give 'em a wash and chop off the tops and bottoms.


Grab your mango, peel the skin off and rip the stone out of it. Try and smash it up a bit as you get the stone out.


Rip through all the kitchen cupboards until you find a beast that looks like this.

What a classic old 70's model... still going strong.


Chuck the chillies, garlic and a small amount of water in first. Give them a spin on low until you have a smooth paste. Next, chuck in all your remaining ingredients... seriously... this is the best power tool in the kitchen.


Rev the thing as hard as it will go.. haha !


Job done. Crack another beer and pour out your chilli mango sauce into a container.

This is a sweet but hot exotic sauce that goes well with steak and especially seafood... guaranteed to impress.
